I have a new found respect for pasta makers past and present.Simple yet requires a great attention to detail and precise technique.I like to think that it was somewhat successful.Little spin off a classic.Spinach,onions,feta cheese and lemon zest for the filling.Found a ricotta recipe that i thought would work well and also add some character to the dish.Marinated baby tomatoes,baby mache,warm honey and a brown butter foam.Thanks IB.
