45 second chocolate sponge cake



Finally got to test out 45 second chocolate sponge cake introduced by Ferran Adria.Made a chocolate sponge cake batter and filled an ISI Whip about halfaway.Charged it twice. I think 3 charges would be ideal though for more of an aerated look. Cooked it in both a plastic cup and paper cup which i poked little holes in to help with the cooking. Sprayed it with pan spray.i found that plastic works best. 45 seconds in the microwave and instant sponge cake you have. Working on some components to pair it with.

Set it and forget it 5hr braised oxtails




Did a traditional braise on the oxtail for about 5hrs.End result was one of the most succulent tender pieces of meat i've had in a while.

Sweet cornbread, yuzu curd, blueberry thyme syrup, brown butter ice cream...

"Apple pie" fritters...

"PB&J" Bannana "scallops", nutella powder, brioche (french toast), grape jam, peanut butter foam...
